Three Reasons Why Dubai’s Dining Scene Just Got a Serious Upgrade

From Italian nonnas to AI chefs, these are the restaurants rewriting the city’s menu

Dubai never does things by halves. The city that gave us sky-high brunches and gold-dusted cappuccinos has found its next culinary thrill, all thanks to one brand. Gastronaut Hospitality, known for its flair for storytelling through food, has launched not one, but three new venues at Kempinski The Boulevard: WooHoo, MamaBella and Ram & Roll.

One step into WooHoo, and the future feels suddenly tangible. Forget open kitchens — here, your chef is actually a neural network. WooHoo is powered by Chef Aiman, the world’s first AI-driven chef, whose digital brain is trained on decades of culinary research. Alongside human counterparts Chef Serhat and Reif Othman, Aiman crafts dishes that combine science and culinary craftsmanship. Standout dishes include the Bluefin Toro Tartare with Osietra Caviar, a feather-light Wagyu Tataki with Truffle Ponzu, or the signature Ramen Carbonara.

Across the lobby, MamaBella tells a very different story. Where WooHoo imagines the future, MamaBella highlights the past. The concept is disarmingly simple. Every month, a real Italian grandmother arrives in Dubai to cook dishes steeped in love. There’s even a 12-seat “Mamma Studio”, where guests can cook, watch and learn, turning a simple dinner outing into something more memorable. Picture culurgiones stuffed with mint and potatoes, lasagne layered just perfectly, and grilled lamb with a hint of rosemary. 

And then, there’s the last of the trio, Ram & Roll. Guided again by Chef Reif Othman, it reimagines the Japanese dining experience with the quintessential Dubai flair. Expect a signature selection of ramen and delicate handrolls. 

Gastronaut Hospitality has managed to capture the spectrum of what food means today: nostalgia, innovation and connection. Whether it’s the reverence of a nonna kneading dough or an algorithm calculating recipe ratios, each table keeps us hungry for more.
