Tucked within Jumeirah Al Naseem, Summersalt has always mastered the art of ease – the kind of spot where the hours drift by effortlessly. Its latest chapter adds something new: a celebration of Latin American flavour told through a distinctly Dubai lens.

The refreshed identity feels like a love letter to everything that made Summersalt special in the first place, now elevated with a deeper sense of place. The new beachfront dining area blends seamlessly with the restaurant’s boho-chic aesthetic, set directly on the sand and framed by sun-bleached textures and an endless horizon.
At the heart of this transformation is Chef Hernan Garcia. Colombian-born and globally experienced, he brings a soulful, storytelling touch to every dish. His menu celebrates the vibrancy of Latin American cuisine, gently layered with delicate Asian influences that keep things light, fresh, and full of character.



The journey begins with ceviches and tiraditos that almost dance off the plate. The tiradito de salmón curado balances texture and tang with silky precision, while the atún version – bluefin tuna dressed in acevichada sauce with quinoa – tastes like the ocean on a good day. The Peruvian classic leche de tigre (don’t worry, no tigers involved) adds authenticity and brightness, with its lively blend of lime juice, fish stock, ají amarillo, garlic, and cilantro.
Mains follow with warmth and generosity: wagyu beef short rib with coriander sauce and sweet potato purée for comfort seekers, or mango salad with goat cheese and hibiscus dressing for those who’d rather linger over something lighter. Even the poolside menu is as impressive – think lobster rolls with spicy mayo, crispy calamari dusted in chilli morita emulsion, and the signature Summersalt Ceviche.

As the sun dips, live DJs, saxophonists, and violinists fill the air, and guests sink into plush cushions with views of the Jumeirah Burj Al Arab – shisha optional, relaxation guaranteed. It’s the kind of place where time softens at the edges, indulgent yet effortlessly grounded.
