The Mandarin Oriental Jumeira, Dubai's latest offering is an upscale Japanese eatery, presenting beautifully crafted dishes in a buzzing and dynamic environment. Adding to the authentic J-vibes decor is the glorious centrepiece of the restaurant's sleek open kitchen, a roaring, flickering warayaki grill. The burning straw of the traditional open fire provide a dramatic lighting element to the whole dining experience, while functionally serving to enhance each dish with a subtle smokey aroma. As the warayaki temperatures rise to 900C, the result is a highly efficient and thorough searing of the outer layer of each meat or fish dish, leaving the succulent inner portions tender and juicy.
The restaurant is the grand vision of acclaimed chef Ross Shonhan, who serves up an inspired exploration of Japanese street-food, making exceptional use of the sizzling warayaki grill. Chef Shonhan has spent many years learning and improving his expertise under the exacting eye of celebrated chef Nobu Matsuhisa, (the man behind Nobu), honing his culinary craft at Nobu in Dallas, Texas before moving on to define the cuisine at London institution Zuma. Mr. Shonhan has since gone on to open various other successful eateries before his venture at Dubai's Mandarin Oriental.
