Situated within the brand new JA Lake View Hotel, recently launched Indian restaurant Kinara by Vikas Khanna pays homage to traditional Indian cuisine with a modern twist. Internationally renowned chef Vikas Khanna, who has also been the host of several Masterchef India seasons and published over 30 award-winning cookbooks, has sought to highlight authentic home-cooked meals in a cosy yet chic setting.

"The vision of Kinara is to bring the comfort of Indian food with the support of great hospitality," Khanna tells BAZAAR. "Kinara means ‘shore’, or a place to call home. The menus honour the raw beauty of an Indian family's kitchen."

Boasting an indoor-outdoor aesthetic with 180 seats and an open kitchen amidst red walls and dim lighting, the eatery embraces a tranquil yet lively ambience. Outdoor, diners will find beautiful and totally instagram-worthy fire displays amid the surrounding greenery and picturesque views of the lake and golf course.

Inspired by the different regions in India from the North to the South, the signature dishes from the sharing menu include dahi ke kebab (yogurt kebab), chicken makhani and achari lamb. The chef's recommendations? "The ghee roast chicken, which is inspired by a recipe from the Kundapur region of South India," he says. "Our dahi ke kebab are also truly special. When our Chef de Cuisine Ashish Kumar came up with the incredible kunafa-textured crust for the kebabs, we were super excited and the feedback so far from guests has been brilliant."

For that extra kick, the four chutneys, namely, Bengali tomato-nigella relish, Konkani pineapple-fennel seed pickle, Punjabi pickled onions and Rajasthani garlic-chili chutney, are the perfect blend of sweet and spicy. For dessert, the chocolate molten cake with walnut crumble, apricot compote and caramel ice cream is the perfect way to wrap up the experience.

"A great meal is the one that makes you connect to a lot of collective memories," says Khanna. "I feel that it’s very important to hold on to the roots [of a place] and at the same time, create a new profile or combination with it. I feel that traditions are very important as they hold memories and history."
