Healthy Granola Mix
Makes 500g
Prep time: 10 minutes
30g brazil nuts
50g hazelnuts
50g walnuts
75g almonds
50g flaxseeds
50g chia seed
100g shredded coconut
½ tsp Himalayan salt
1 tbsp palm sugar (optional)
2 tbsp raw cocoa nibs (optional)
3 tbsp coconut oil
30g sunflower seeds
1. Preheat your oven to 200C. Place the nuts on a baking tray and roast for 5 minutes.
2. In a food processor, blend the nuts with the flax and chia seeds, coconut, salt (and palm sugar and cocoa nibs if you are using them). Pulse until they resemble a granola texture.
3. Add the oil and sunflower seeds and pulse just once more to combine.
4. Serve with almond, coconut milk or yoghurt and add raw honey if you prefer it a little sweeter. Enjoy!
Coconut, Avocado & Pistachio Pudding
Serves 4
Prep time: 15 minutes
3 ripe avocados
300ml coconut milk
3 - 4 tbsp raw honey
1 tbsp chia seed
2 tbsp shredded coconut
3 tbsp shelled, chopped pistachios
1. In food processor, blend the avocados, coconut milk and honey until smooth.
2. Add the chia seed and pulse one more time to combine.
3. Pour the pudding in ramekins and set in the fridge for at least 30 minutes.
4. Top with coconut and pistachios and serve cold. So good.
Vanilla, Banana, Almond & Flax Shake
Serves 4
Prep time: 5 minutes
500ml almond milk
2 ripe bananas
3 tbsp natural almond butter
1 handful of peeled almonds
2 tsp milled flaxseed
5 pitted dates
½ tsp Himalayan salt
1 handful of ice cubes
1. In a blender add all the ingredients and blend until smooth.
2. Add the ice and blend until well combined.
3. Serve with a sprinkle of flaxseed and serve cold. Delicious.
