Great Eggs-Pectation: 3 Delicious And New Ways To Cook Your Morning Eggs

CHILLI EGG SANDWICH

Prep time: 10 minutes
Serves 2

6 organic or free range eggs
¼ tsp salt
3-4 tbsp butter
¼ tsp chili flakes or ½ red chili thinly sliced
1 spring onion, just the green part, thinly sliced

  1. In a small bowl, whisk the eggs together with the salt.
  2. Heat a non-stick pan over medium-low heat, add the butter and chilli.
  3. Stir for a minute before adding the eggs, and, using a wooden spoon or spatula, bring the sides of the eggs to the centre gently, creating your scrambled eggs.
  4. Cook until desired consistency, sprinkle with the spring onions and serve with fresh bread.

FETA & TOMATO EGG CREPE

Prep & cook time: 10 minutes
Serves 2

6 organic or free-range eggs
150g feta cheese
A handful of cherry tomatoes, cut in halves
Extra virgin olive oil to drizzle
A knob of butter
Fresh basil to garnish
Pinch of salt and black pepper

  1. In a small bowl, whisk the eggs together with the salt and pepper.
  2. Heat a small non-stick pan over medium-low heat. Add the butter, and when melted and slightly golden, pour in half the egg mixture.
  3. Just like a pancake, let the egg cook on one side almost fully before gently fl ipping it on to the other side for just a few seconds.
  4. Flip onto a plate when it’s ready, and repeat the same process with the remaining egg mixture.
  5. Crumble the feta on top, add the tomatoes, drizzle a little olive oil and top with basil.

Eggs & Potatoes

Prep and cook time: 25 minutes
Serves 2

Vegetable oil or butter to fry
3 potatoes, cut into small cubes
4-6 organic or free range eggs, hard-boiled
3 spring onions, finely chopped
Extra virgin olive oil to drizzle
Salt and pepper to taste

  1. Boil or fry the potatoes in a little oil or butter. Season with salt and pepper to taste and cook until you can poke them gently with a fork.
  2. Remove and drain the potatoes from the pot or pan and set aside.
  3. Hard boil the eggs, then peel and cut them into quarters, set aside.
  4. In a bowl, add the potatoes, eggs, spring onions, and olive oil and combine everything together.
  5. Season to taste and serve with Arabic bread or bread of your choice. Delish!
